Only two places have pancakes that thrill me: Perkins and the Original Pancake House.
Aside from that, I discovered Organic Batter Blaster– pancake batter in a Whipped Cream style canister.
It makes wonderfully light, tender and flavorful pancakes.
Expensive? You bet.
But in these recessionary times, comfort is important.
After you flip the pancake over, put a big tab butter on top to melt as the other side cooks…

How about the IHOP on Broad Street in Bloomfield? that one too??
Mark Bittman has a recipe on the NY Times website (somwhere) for pancakes made with ricotta cheese and sour cream or yogurt. They are light and tasty. A little Grand Marnier in warmed Berkshire Sweet Gold maple syrup (get it here: http://www.berkshiresweetgold.com/) and you are in business. Laissez les bons temps rouler!
