Take Back the Kitchen: Serve It On a Stick

satay.JPGToday I would like to talk about the merits of food on a stick. My kids will eat a lot more stuff when it's served like a lollipop. I thank the folks at Whole Foods who finally got one my kids to eat cheese by offering him samples on a toothpick.

Will your little ones eat Thai Chicken Satay? They might on a stick! Serve these with ketchup or anything else. For a more sophisticated palate, I have a variation of the following marinade along with a spicy peanut sauce. If your children have a peanut allergy, like Georgette's, substitute with Sunbutter.

Chicken Lollipops:

1 1/2 TBS Molasses
2 TBS plus one tsp soy sauce
4 Chicken breasts, thinly sliced, about 1/4 inch thick
8 inch bamboo skewers (get them at Whole Foods or any Asian supermarket like East West Market in Bloomfield)

In a medium sized sauce pan, combine molasses and soy sauce and stir over a low flame until ingredients are fully blended. Let cool and add sliced chicken and marinade in a plastic bag or covered glass bowl. Place in fridge for at least 2 hours, but best if left overnight to marinate. If you remember, stir once or twice to make sure all the chicken is soaking up the marinade.

In a medium sized frying pan, fry up the chicken until cooked through, about 12-15 minutes. When they have cooled a bit, skewer them on the sticks and serve.

An alternate way to cook them is to bake them. Lay each piece of chicken over a rack placed over a baking sheet at 350 degrees for about 15 minutes.

Boy do I have a FUN answer for this, but I don't want Kristen to keep me on the naughty mat any longer than needed.

I just want to add that we should make sure to watch our kids so they don't poke an eye out with the stick! Shorten the stick with a scissor if need be.

My son used to love chicken and as of late has not been interested. This might be just the thing to reengage him. I might also try mango spears - what do you think?

Mango on a stick is a great idea. Let's face it, most foods can be eaten on a stick! I've actually eaten mango on a stick sprinkled with chili pepper, sugar and lime juice at Coney Island. It's a tasty Mexican treat.
